I usually buy fish in discount stores, not hypermarkets - it's fresher, doesn't smell and fries well. And even frozen has less water than hypermarket pollock. And as we're on the subject of fish and water, as these are related things 馃悷 馃挦 I never believed it, but really if you have frozen fillets, defrost the fish slowly, in the fridge. The trick is that quickly defrosted fish (in the oven, or on the windowsill 馃槈) will still have some water - and then frying is pointless - it splatters, the breading doesn't stick, and the taste is slightly dramatic.
