Agnolotti - Ricotta, Spinach, Sage Butter, Extra Special

Here's a classic, but a classic served very, very fresh. Ricotta, spinach, sage, herbs, everything is super fresh, spinach in leaves, sage as well.
Only the guests turned out not to be fresh, as it was served with a large amount of red wine. Sage butter - at first, it doesn't knock your socks off, but after a while, it's hard for me to imagine a windowsill without fresh sage in a pot. It's a bit addictive, it refines the dish, and what's very cool - sage can stand for a long time, and it regrows if you give it time.
