Always Awesome Onion

Alright then. The queen of the Polish table - the onion 馃 is my favorite vegetable.
I add a lot, wherever I can, there's practically no day without chopping onions. The coolest thing about onions is that they almost never play the main role in a dish, but without them, nothing else plays the main role 馃槑
Almost never - because in the dish in the picture, it does. Onion soup is simple and terribly good.
It's made with a large amount of onions (large, a kilogram for example), broth, and white wine. Wine doesn't suit everyone - you have to convince yourself a few times, but then it's hard to think about onion soup without wine. The classic French recipe instructs to put this soup in the oven at the end, along with a toast covered with a generous amount of yellow cheese - I've done it, but it's also really good on its own.
Oh, and the dish is heavy: onions, butter, cheese, wine. It will take a while before we forget about it, but is that the point? 馃檪
