Celery - The Base of Bolognese

I always associated celery as a vegetable that is cut into sticks and dipped in sauces during parties. I must admit, I didn't have the best association with it, as all the other vegetables and sauces would disappear, but the celery usually remained. I was quite surprised when I read in a book about Italian cuisine that this celery is the basis of the bolognese sauce, and what's more, the first bolognese didn't even contain tomatoes. But once I read it, I decided to give it a try.

Celery completely changes its character after frying. It's delicious, aromatic, and loses its bitterness known from the raw version. Thanks to the book 'Italy on a Plate', celery has become a vegetable that is constantly present in my fridge, the basis of many sauces. I also really like cutting it, and this grateful vegetable is excellent for that.
