Chłodnik, with Botwinka, but it also works with Beetroot

A classic of summer cuisine, a bane for children, one of the more seasonal dishes. And one of the dishes that taste better the next day, I don't know why - perhaps the mysterious 'marinating' plays a role here 🙂 Botwinka or beetroot, radish, fresh cucumber - they need to be finely chopped, but not too finely, as they should crunch in your teeth.
We pour broth over it, and whatever we have on hand under the white - cream, yogurt, kefir, buttermilk. The recipes vary, but each one works, the configuration is arbitrary, just not spoiled 🧟♂️
