And here's another thing that Italian cuisine has perfected - namely risotto. I found Arborio rice in Auchan at a definitely too high price, but oh well.

If you don't like rice dishes, lumps, mushes, or slops, then risotto is what you should try. I think it can change your approach to rice. Its base is (important) broth and white wine and this, unlike cooking in water, makes a big difference.

You fry the onion with garlic, then add the dry rice and diligently moisten it with wine and broth until everything is absorbed and becomes soft. And when it's done, we thicken it with parmesan and season it, and of course, garnish with greens on top.

Very simple, but you have to stand by it (probably for about 20-30 minutes), stir and pour. And don't overcook it, because that's probably the biggest drama for this dish. #risotto #classicrisotto #wineandbroth #parmesan
