I think I've made falafels here before, but this time they came out a bit more unusual, and perhaps closer to the original, as they have a slightly sweet aftertaste that reminds me of Middle Eastern cuisine 👨‍🍳. I achieved this (not that I planned it) with cinnamon and star anise, which I accidentally added a bit too much of, but with good results. It's worth making a lot of these patties, as they need to be deep-fried, and it's a waste to pour so much oil for just four pieces. Oil, chickpeas, onions, spices (baking soda!

) and you can enjoy the oriental scent, which some associate with sewage. And it always needs to be said, because it's easy to get confused in the heat of the moment: falafels are made from raw chickpeas. Soaked, but raw, not cooked. Hummus is made from cooked ones! 🍚
