Fantastic Ravioli with 'Nduja and Cottage Cheese

This dish is a prime example of how hard it is for me to exercise restraint when exploring new flavors. Namely, I recently had a pizza with 'nduja - an Italian sausage that is more squeezed out than sliced. And I liked it, so instead of buying a piece for some dish, I bought a kilogram.
What to do with a kilogram of spicy sausage? Well, everything possible, just to use it up. But to keep it Italian, and to test out new wooden molds, we're making ravioli with 'nduja.
And cottage cheese, because 'nduja is spicy. The taste of this filling is really great. Admittedly, you can't taste the cottage cheese at all, but it probably makes the sausage less noticeable 馃檭 The ravioli turned out beautiful, decorated, and generously filled.
And it's fine if you eat about 5 pieces. However, a kilogram of sausage obliges, and I ended up with about 60. I ate for 4 days and will take a break from 'nduja for a while 馃槄
