First, Classic Carbonara

There comes a time in a person's life when they think to themselves, 'I'm going to do something right. ' I've made carbonara, or rather something akin to carbonara, many times, but never with guanciale, as it wasn't available in any stores.
So I ordered it online, it arrived at the parcel locker, straight into the fridge, it worked out. Real Parmesan, DOP, or whatever it's called. Yolks, not whole eggs, I gave away the whites.
What could go wrong? I still don't know to this day, but it wasn't that good, maybe the taste of the yolks was too yolky.
The sauce nicely coated the pasta, the meat melted like in the movies, but the taste of the dish was average. Maybe I already have too Polish a palate and need to do it my way? We're taking a break from carbonara, I need to make amends with it 🙂
