Homemade Tagliatelle (Probably)

I really enjoy making my own pasta, it's probably the most enjoyable thing in the kitchen, but it's tied to something less enjoyable, which is cleaning up after making pasta. And when I make pasta, I do it with gusto - flour flies, the machine turns, and the crank falls off. Pappardelle and tagliatelle, in particular, are the simplest pastas in the world, and as luck would have it, they are also my favorites, which makes the process less tiring 🙂

I recommend everyone to make their own pasta.

It's more delicate, and the satisfaction of making it somehow makes it taste better 😎

I use a pasta rolling machine - it's useful, it makes the dough evenly thick across the entire surface - I couldn't manage it so well with just a rolling pin. A big plus is that you can freeze the pasta dough, I've checked. I sometimes make pasta from a kilogram of flour and 10 eggs, and we eat less than half of it for a big dinner. The rest goes into the freezer, and the second time around, we have less cleaning up to do 🙂
