Inseparable Duo - Potatoes and Thyme

I'm not sure if thyme has always been so prevalent in stores, or if it's just this year, but the fact is that this season it's one of the most readily available herbs. I dare say, it even ousted rosemary from the discount stores 馃檪 馃尶
Thyme is very aromatic and its aroma permeates cooked dishes, so it should be added cautiously.
Baking, however, is a different story, where thyme starts to cooperate, and it works best with potatoes 馃
As for baked potatoes - everyone complains that they are not as crispy and good as fries. Well, they are not, and they will never be, as fries are made in oil 馃檪 But all you need to do is to put the potatoes in boiling water with a spoonful of sugar and hold them there for a while before baking, to create something really good, slightly crispy and nice.
