Mafaldine with Butter Ragu and Parmesan

Ragu is a meat sauce, added to various dishes, but most commonly to pasta. In ragu, meat plays the main role, it is not an addition. It's easy to make, provided that the ingredients are decent - good quality meat (it can be minced), decent fat (I use butter, I don't know if I'm not breaking some serious rules here), a bit of onion and a hint of tomato.

And the taste, well, it's awesome and incomparable to any store-bought, if you make such a thing once, you will rarely be able to eat others. A few remarks: * Meat plays the main role, do not flood it with tomatoes - there should only be a few, if any at all * do not skimp on butter, less healthy, but better! * celery can be our ally 🌿
