Pasta with Parsley Pesto (with Lemon!) and Burrata

As you probably noticed, I used half a burrata for the previous dish, so I had to put the other half into something. On the same shopping trip where I managed to grab a cheap eggplant, I also found cheap and large (mega! ) parsley at the market.
You can add parsley to soups, purees, basically everything, but you can also make it the main ingredient of a dish. Parsley pesto is made just like any other (olive oil, parsley, Parmesan, nuts) - here I did it a bit differently, because I wanted something crunchy to bite into and I added the toasted nuts separately. Burrata lands on the plate, sprinkled with lemon juice, and we eat!
Recipe
The recipe for pasta with parsley pesto and burrata includes ingredients such as: burrata, parsley, parmesan, nuts, and lemon. The parsley pesto is prepared similarly to other pesto, but the nuts are roasted separately for added crunch. Burrata is served on the plate with lemon juice.
Ingredients
- 200 g of pasta (e.g., spaghetti or tagliatelle), homemade if available
- 2 bunches of parsley
- 50 g of grated Parmesan cheese
- 50 g of pine nuts
- 100 ml of extra virgin olive oil
- 1 clove of garlic
- 1/2 of a burrata
- Juice of 1/2 lemon
Instructions
- Heat a dry pan and add the pine nuts. Toast them for about 3-4 minutes, stirring until they become golden and start to smell (they really will). Set aside to cool.
- In a blender, place the parsley, grated Parmesan, garlic, and olive oil. Blend until you achieve a pesto consistency. Season with salt and pepper to taste. Here you can experiment - less of this, more of that - it will be fine 馃憣
- Cook the pasta. Drain, reserving some of the cooking water (a cup).
- Transfer the cooked pasta to a large bowl and add the parsley pesto. Mix thoroughly so that the sauce evenly covers the pasta. If the sauce is too thick, add some of the reserved pasta cooking water.
- Divide the pasta onto plates. Place half of the burrata on top. Drizzle with lemon juice and sprinkle with lemon zest, if using.
- Finally, sprinkle with toasted nuts and serve immediately.
