Rogaliki, Crumbly Yeast, Simply the Best

My wife Kasia's favorite dessert, for which she usually reciprocates by cleaning up the kitchen and wiping off the cabinet handles covered in floury paste. Rogaliki are neither crumbly nor yeasty, but in this version, they combine the good qualities of both pastries - they are crumbly, but they also rise nicely and are fluffy after baking. I'll add right away that you can slightly bend such recipes, you can add, for example, more yeast, so they rise better. This risks creating holes, but the apple inside remains whole and does not leak out.

Most recipes of this kind contain a small amount of sugar in the dough, hoping that you have sweet apples, and in line with the trend, because of the white death. I recommend baking a few pieces and trying them, and if they are not sweet enough, you can sprinkle the next batch with sugar (I also add cinnamon), to taste.
