Roladki - Turkey, Bacon, Citrus - It's Beautiful

I recently read that if someone likes juicy poultry, it's worth wrapping it in bacon, because then it doesn't dry out. I don't know if I like it, but I rushed to check and try.
The citrus and the processing method, namely confit, in good olive oil, were also supposed to take care of the juiciness. The dinner was supposed to be a bit festive, so obviously, meat and citrus go together perfectly.
The matter is simple, we wrap the turkey pieces in bacon slices and arrange them tightly in a dish. No toothpicks or strings are needed, the bacon does not spring back 🙂 and it is easy to arrange everything.
We arrange the meat tightly, but so tightly that slices of orange can be added between them. You can also add juice, from a lemon or an orange. I happened to have orange oil, so I skipped this step.
Recipe
The roulades are made of juicy turkey, wrapped in bacon to maintain moisture. Additional juiciness is provided by citrus fruits, and the confit method in olive oil adds depth of flavor. The roulades are arranged tightly in a dish, with slices of orange in between for aroma.
Ingredients
- 1 turkey fillet
- 1 pack of sliced bacon
- 2 oranges
- 1 lemon
- 200 ml of olive oil
Instructions
- Cut the turkey fillet into pieces about 2-3 cm thick, so that you can wrap them in bacon.
- Season the turkey pieces with salt and pepper.
- Wrap each piece of turkey in a slice of bacon.
- Slice the oranges and lemon into thin slices.
- In a baking dish, arrange the bacon-wrapped turkey pieces tightly.
- Insert slices of orange and lemon between the pieces of meat.
- Pour olive oil over everything, so that the meat is partially submerged.
- Preheat the oven to 150°C.
- Put the dish in the oven and bake for about 1 hour, until the meat is juicy and soft.
- It is best to serve in the dish in which we baked the dish, because then it looks the nicest.
