Tart - with Homemade Apple Mousse

There's nothing complicated here, it's a classic tart with a shortcrust base and apple mousse. I'm posting this because the mousse was made from our own apples, which are small, wormy, and incredibly annoying to peel. Is it worth it? Yes, it is, because they have an interesting taste, they are sour, but in a different way, this sourness is addictive 馃檪 For a bit of flair, there are no lattice strips from the dough this time, instead there are little rolls 馃檪 Heads up - Tip!

馃挕 Shortcrust pastry (sweet) is easy to manage with the 3-2-1 rule, e. g. 300g of flour, 200g of butter, 100g of sugar. And 2 eggs, or yolks, as in the classic recipe.
