The Underrated Kale

Here's another take on kale, this time in a slightly more 'spinach-like' set, with sun-dried tomatoes. There's also a ready portion of vegan protein based on peas - and an idea to try making such things yourself this year. The pea protein is already on its way to the parcel locker.

In this setting, kale loses a bit of its, let's not kid ourselves, cabbage-like nature, and gains elegance. And to prevent it from becoming too elegant, I served it with groats, just regular ones, not those fancy ones with wine and broths. The whole thing is sprinkled with Parmesan, but it would probably be better without it.
