Thyme Roasted Chicken Fillet

Sometimes there comes a day for meat, and I mean real meat, not some minced or sliced stuff. Here we have chicken, but properly marinated and roasted in herbs, including one of my favorites - thyme. 馃尶
Marinating is both a simple and complicated matter.
Simple, because it's a very straightforward process (oil, spices, rubbing). Complicated, because you need to think about it a few hours in advance, preferably the day before, and in my kitchen, thinking and planning is not a simple matter 馃崡
This time it worked out, a marinade of paprika, garlic, and thyme, herbs that are great for roasting. I was supposed to eat it with rice and a red cabbage salad, but I ended up eating it alone in two sittings 馃槑
