Tofu, Mango Chutney, Roasted Potatoes

As you can see, my plating skills vary. Sometimes it works out, and sometimes it ends up like this 馃檪 Achieving balance is difficult, between not serving too much, and not too little, and of course, serving what's necessary.
Here we have just what's necessary, which is well-roasted tofu, potatoes baked a shelf higher, and mango chutney, of which I made a bit more recently. The combination of flavors is really successful, light, summery, sweet, salty, it has everything 馃檪 It also has a sage leaf, for no apparent reason.
