Tomato and Pepper Goulash

Zucchini, tomato, and pepper - always a good combination. On a base of onion and garlic. And butter.
🧈🌶️🍅🧄🧅 You need to stew it for a long time, so the pepper becomes soft, it's best to cover it so there's plenty of liquid, and remove the lid once the pepper is done. It turns out to be a bit mushy goulash, but really good. You can add lentils to make it more nutritious, but as we know: lentils in a thick stew cook longer than in a thin one. Patience 🙂
