Udon with Chicken

I still can't make Asian noodles, those different thick udons, so I just buy them. They are cool, although I have no comparison here with homemade.

The rest, however, I can already make, and the rest are mushrooms fried in butter and chicken fried in butter (separately, because together they don't do so well, mushrooms release a lot of water and the chicken then basically boils). Add to that delicious vegetable broth, a hint of miso and it's wonderful. Add as much broth as you want, I always try to have 'neither soup, nor pasta', something in between, so that everyone asks what it is eaten with 馃檪 The photo looks a bit like some UFO, but it really was like that, such shadows 馃檪

Recipe

The Udon with Chicken recipe includes such ingredients as: ready-made udon noodles, mushrooms fried in butter, chicken also fried in butter, vegetable broth and miso. The chicken and mushrooms are fried separately because mushrooms release a large amount of water.

Ingredients

  • 1 portion of udon noodles (available in supermarkets, in the Asian food section, can be in a bag)
  • Chicken / turkey fillet
  • 5-6 mushrooms
  • 3 tablespoons of butter
  • 500 ml of vegetable broth
  • 1 large tablespoon of miso paste
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 3 cloves of garlic
  • 1 onion

Instructions

  1. Cook the udon noodles, drain and transfer to a bowl - drizzle it with oil (preferably sesame) and mix, so it doesn't stick together.
  2. Cut the chicken breast into thin strips. Season with salt and pepper, paprika, and whatever you like.
  3. Clean the mushrooms and cut them into slices, as you prefer.
  4. Heat half of the butter in a large frying pan. Add the mushrooms and fry until they are soft and slightly golden, about 5-7 minutes. Transfer the mushrooms to the bowl with the noodles.
  5. In the same pan, heat the remaining butter. Add the chicken and fry until it is golden and well cooked, about 5-7 minutes. Transfer the chicken to the noodles and mushrooms. Mix everything.
  6. In a small pot, heat the vegetable broth, add the miso paste and soy sauce. Stir until the miso paste dissolves, but don't cook it for too long.
  7. Transfer the chicken with mushrooms and udon to bowls. Pour the broth, as much as you like. Decorate with herbs.
