In our house, uszka is usually Kasia's masterpiece, and it's often the best dish of Christmas Eve. I don't even need borscht to go with them, but it doesn't hurt either 馃檪 We don't have a grinder, so we finely chop the mushrooms - they probably come out even better than the ground ones. Onion and salt are all they need to be happy.

You can experiment, but you don't have to, uszka are often made once a year and it's hard to overeat them. The dough is typical pierogi dough, made with flour and hot water. If you don't eat them all, you can freeze them, but first separately, on a tray, before they go into bags. This is important, because crumbling uszka is a painful sight 馃檪
